Laurent Lignier and his father Hubert manage 9 hectares of vines, primarily in the communes of Morey-Saint-Denis and Gevrey-Chambertin. They have practiced viticulture for over 25 years without the use of weed killers or chemical insecticides. Domaine Hubert Lignier’s climats and the soils of its great terroirs are preserved through a respect for nature and support for the natural development of microorganisms in the soil. Laurent and Hubert believe this is key to achieving a balanced growth of the vines. Since 2011, the domaine has employed organic protective treatments.

For vinification and aging, the domaine utilizes traditional and natural methods, believing that the quality of the fruit is essential for crafting better wines. The fruit arriving at the cuverie is carefully sorted by hand before being transferred to the fermentation vats. Each terroir, from Bourgogne to the Grand Crus, is respected, and its characteristics are reflected in the resulting wine. The use of new oak is minimal, and the wines are aged in barrels on their lees for a relatively long period (between 20 and 22 months). No racking is done after the completion of malolactic fermentation, and the wines are bottled by gravity only, without fining, to preserve their freshness and enhance their aging potential.

The resulting wines are fresh, fine, and elegant, offering pleasure from barrel to bottle, with a long aging potential.
